Pink Bourbon is widely considered one of the most refined and sought-after varieties in specialty coffee—not because it’s loud, but because of how precisely it presents itself. It trades intensity for elegance. Instead of overt fruit or heavy sweetness, it offers clarity, structure, and a kind of quiet complexity that unfolds over time.

This coffee demanded that same level of attention from us.

We spent nearly twice as long developing this roast as we typically would. Each iteration revealed something new—subtle shifts in sweetness, a more defined acidity, a cleaner finish. Where we landed is something we think the Vargas Family would be genuinely proud of. 

The cup opens with a delicate, cane sugar sweetness, moving into soft orchard fruit—apple and grape—before settling into a layered, caramel-like finish. The acidity is refined and wine-like, providing structure without sharpness. Everything feels intentional, balanced, and remarkably clean.

This is where Pink Bourbon stands apart.

It doesn’t rely on boldness to impress—it rewards attention. The experience is less about immediate impact and more about progression: how the cup evolves as it cools, how the sweetness deepens, how the structure holds everything together from start to finish.

It’s one of the most nuanced and compelling coffees we’ve ever worked with—and easily one of the most special.

It won't punch you in the face with fruit tones, or blow your mind in florality...but, as you drink it, you may be surprised at how something seemingly so simple can also feel incredibly complex at the same time.

This coffee comes from La Piragua in Huila, Colombia, where Arley Vargas works alongside his father, Alexander Vargas, continuing a multi-generational commitment to exceptional coffee production.

At 1,800 meters above sea level, La Piragua benefits from ideal growing conditions that contribute to the clarity and structure found in the cup. The farm also serves as a processing hub for neighboring producers, supporting a broader community of coffee growers who rely on its wet mill for consistent, high-quality processing.

Meticulous cherry selection—led in large part by women in the community—combined with careful washed processing allows the inherent characteristics of Pink Bourbon to shine with precision.

The Vargas family continues to invest in sustainable and regenerative farming practices, ensuring that both quality and environmental stewardship remain central to their work for years to come.
