Dark roasts are often treated as a category rather than a craft. In specialty coffee, it’s rare to see a roaster intentionally take a coffee darker—rarer still to do it with a single origin—out of fear that depth will replace character.
This coffee proved otherwise.
We loved this Papua New Guinea at lighter roasts, where it showed bright, delicate notes like lemongrass, apricot, and peach. As we pushed the roast deeper, something unexpected happened: instead of losing its personality, the coffee transformed. Those lighter notes became tea-like and aromatic, with a richness that layered syrupy sweetness and chocolate bitters underneath.
The result is a dark roast that still feels expressive and modern—full-bodied and comforting, but far from flat or smoky. It hits a sweet spot we don’t often find: deeply developed, yet still nuanced and surprising.

This coffee comes from the Nebilyer Valley in Papua New Guinea’s Western Highlands, produced by a dedicated group of smallholder farmers delivering cherry to the Kuta Wet Mill. Farms in this region are typically small, family-run plots, grown under shade at high elevation within designated conservation areas.
Coffee from the Nebilyer Valley is known for its structure, sweetness, and clarity—qualities that make it especially versatile across roast styles. This lot is made up of traditional varieties including Bourbon, Typica, Caturra, Catimor, and Arusha, grown at elevations around 1,500–1,600 meters above sea level.
Cherries are fully washed using a meticulous, multi-stage fermentation and washing process at the Kuta Wet Mill, then carefully sun-dried and conditioned at the Kuta Dry Mill. Final preparation includes density sorting, size grading, color sorting, and hand selection to ensure consistency and quality.
Beyond coffee quality, the Kuta group is deeply invested in community and environmental stewardship. Initiatives include classroom construction, annual seedling distribution to farmers, composting coffee pulp for mulch, vermiculture for seedling soil, and a multi-dam water treatment system designed to protect local waterways.
